changing the header text on left/right side boxes

I know this is a silly question to some, but I can't figure out how to change the word "Manufacturers" on the left side to something different. I've searched through the whole installation, and can't figure out where this text is defined. I THINK that it might be in includes>boxes>manufacturers.php, where it calls this:

 

$info_box_contents[] = array('text' => BOX_HEADING_MANUFACTURERS);

 

but I can't figure out where BOX_HEADING_MANUFACTURERS is defined. Am I missing something really obvious?

... and one more thing, while I'm asking dumb questions - where do you go to define the site's TITLE and META tags? I don't see any such fields in the web admin interface, and am not having any luck plowing through the directory structure ... help a dumb guy! :)
