Editing the New User Fields

I would like to change the fields:

 

To another more "appropriate" title for the site i'm going to be running...

 

Do i have to edit the SQL database to do this? If so where should I start. If not a database edit, which file will accomplish this?

 

I have already taken a look at the "create_account.php" file, and nothing seems relevant.
