The default is to display products in alphabetical sort order - the customer can choose to resort on price and some other attributes. Perhaps what you really want is to be able to specify a sort order for products within a category. That is not a standard feature, but it should not be hard to add. Categories already have a sort order. The reason for this is that there is a natural order in how we would like to present our products in any given category.
