Changing values on create account page

Hi

 

I'm trying to reset some of the defaults but can't find where they get set. For example, on the Create Account page, under Your Address, I would like to change Suburb for Street 2, say, and State/Province for County.

 

What I would really like to know (I think) is how this snippet (it's from the source of create_account.php) gets filled with the value 'Suburb' :

 

<td class="main"><?php echo ENTRY_SUBURB; ?></td>

 

I'm trying to get my head around how all the files fit together....
