What are the 'best' payment options

Now going through the payment area of my shop.

 

1. Is there a payment method of choice by people here ie is PayPal better than another option - any opinions ?

 

2. I have enabled Paypal but I notice with paypal, my shop isnt passing the order amount through to paypal - is this a feature (or does the customer have to input this themselves ?)
