changing values

Hi

 

I've got osCommerce up and running fine. What I've been trying to discover is how to change some of the values in the templates. For example the word 'Suburb' is not really used in the UK and it would normally be known as 'Address 2' or similar. Another example is changing 'State' into 'County'.

 

Can anyone give me a quick pointer as to where to start looking/fixing?
