Product Quantity Set To One?

I am an antique dealer. I only have one of any particular product. Never ever two. I want to make the quantity box in the product page default to one and unchangeable. Is that possible? Also, since there are no reorders, is there any way to automatically delete an item from the database once a user purchases it, or at least hide the product so that it never shows as out of stock? Thanks

set the stock level to one, and then set the allow checkout on nonstock to false. once sold, set it to inactive.
