Check out process

I have zone rate shipping to charge on weight and during the check out process it shows the shipping charge along with a message saying ship to UK (or US etc) followed by the weight and then the price.

Where can I remove the shipping weight? I have looked and looked but cannot find it.

Any help or pointers gratefully received.
