How do I remove......?

I have seen this done on other sites and was wondering how do I remove the

Let's See What We Have Here

and replace it the the category name and the product?

gneerally that is all done in includes>languages>english>english.php

in catalog/includes/languages/english/index.php at the bottom is this code

 

define('TEXT_ALL_MANUFACTURERS', 'All Manufacturers');
} elseif ($category_depth == 'top') {
 define('HEADING_TITLE', 'What\'s New Here?');
} elseif ($category_depth == 'nested') {
 define('HEADING_TITLE', 'Categories');

change to

and change
