by default the standard version of osCommerce has no Administration protection, thus you need to contact your HOST who can tell you how to change the password, unless you have installed some contribution.

The Wiki Documentation has no instructions on changing a password, it possibly has instructions on adding a module, however your host can explain to you how you need to setup your htaccess file. Search the contributions for info on that also, just search for htaccess

.htaccess is a hidden file, do you have shell access to the server? is it a *nix server? do you use a control panel? these are all items which go through your host provider . . .
