First, if you're trying to change the title from osCommerce to whatever you want your title to be, you just look through the /catalog/includes/languages/(your language).php file. It should be in there. You can also change the title in the individual /catalog/*.php files to be whatever you want. There is another method, and I used something similar to the one in this contribution, but Easy HTML Title looks to be one that will work to change the title on individual pages to copy the breadcrumb trail.
