In osC, can you (without modification) assign different prices according to which payment system is used? Also, is there a "taxable" field when you set up the inventory, to differentiate between items like web hosting (nontaxable in my state) and programming/design services (taxable in Texas)? No, modification is required. There is a contribution to help you with charging a flat fee for each module though. Yes, the demo store has Taxable Goods and everything else.
