help changing order status text

Hi i am trying to find out how to change the order status text. At the moment it says pending, processing and delivered but i want to change processing to dispached. I can remember changing it on an old store but cant for the life of me remember how to do it again. Any one know which file needs to be edited.

You might prefer to change it to 'dispatched' :P

 

You can do so in admin>localization>orders status
