Making changes to the structure of products

I need to change the cart to where I can define a Course and then offer Classes (the kind with techers and pupils) in that course at various locations and then offer seats in said class for purchase.

 

I don't suppose anyone has done something similar to this and is willing to share some pointers? Heck, any suggestions on what would be the easiest approach would be appreciated.
