Dev mode activates for all sales channels, but you can use https://www.oscommerce.com/app/maintenance-module

It allows you turn on maintanance for separate sales channels

There used to be a maintenance mode available in the shop but since the last update that looks to have disappeared and now you are supplying me with an app that is "Coming Soon"?

The maintenance mode was in the shop but it worked for all sales channels at the same time. After the redesign, it was moved to an extension and allows separate activation for each sales channel.

It is ready now.
