language change

I have 2 questions about languages under oscommerce:

 

1- How do you change the default language ?

I tried to change the value of the following variables :

define('DEFAULT_LANGUAGE', 'es'); // use the code

define('DEFAULT_CURRENCY', 'EUR'); // use the code

with no success.

 

2- I saw they were french sites in the live shops list.

Is there a french module I can find somewhere ?
