This is what happens: The customer puts some stuff in the shopping cart but larger quantity than what is available. They are then told to change the quantity. They do and is now allowed to proceed to payment. They pay with credit card and the payment is accepted, but now they are redirected back to the shopping cart where some of the stock is once again marked as being out of stock. However it is not actually the case that the product is out of stock with the corrected quantity. The site is a oscommerce 2.3.3.3 What could cause such a thing?
