change the order information, programatically

Hi, somebody realize any order. Does exist any simple, faithul, probably PHP way, how can i save any changed information to my admin/orders database? Concrete, a customer set his own first name to Johny, but i dlike to save the string: Johny+Mark or anything else. Thanks for your time.
