MrPhil
Your base problem is that your pages are being displayed in UTF-8, but your "pound sterling" sign was entered in Latin-1 (ISO-8859-1) or possibly Latin-9 (ISO-8859-15) as a different encoding, which doesn't show up in UTF-8. If you can't edit the offending entry (file or database) in UTF-8 mode, changing it to an HTML entity "£" as suggested above is a workable alternative. It will take up 5 more bytes than a "native" binary character, but that's a nit unless your pages are filled with thousands of pound signs.
