Changing Title in languages/english.php not working

I want to change the title of my already customized site and changing it in languages/english.php does not do anything. how do I find out where the root code for the title is.

 

Same with the copyright text at bottom of site. How do I find where the root code is for that text.

The Title Tab comes from the store name you assigned the store in admin under MY STORE. The Footer text SHOULD be located in the english.php file and will appear as "define('FOOTER_TEXT_BODY'................."
