I've seen on this sites how you have one pull down menu and once you make a selection another one appears which gives you more options, for example on this page you have a manufacture box when I select a certain manufacture the next drop down that pops up is for model number, I know I can do this with the default oscommerce manufacture search and then list all the models but I was just curious if this same exact thing can be done with oscommerce

Have you looked at Extra Product Fields? That might do close to what you want. Very powerful filtering.
