i want to change the telephone number text to say something different

Open catalog\includes\languages\english.php (and/or any other relative language file).

 

Find:

define('ENTRY_TELEPHONE_NUMBER', 'Telephone Number:');

 

Change in between the parenthesis Telephone Number to what you want. Don't forget to make the appropriate character allowment adjustment in your admin panel.
