Next question is, does anyone know how to change the size of images that you can't change through the main admin area? I need to alter individual images from landscape to portrait for example.

What images do you mean?

Product, category, subcategory etc images are set via admin>configuration>images

What images you mean that "can't change through the main admin area"?

I have edited images as needed but I can't seem to show them in both landscape and portrait... either they show up as one or the other. I can't have a mix of the two. I upload photos and most of them are in landscape form so I set it to show them that way, but when I upload a photo in portrait mode (as the photo needs to be scene) it gets squashed and warped to fit in landscape mode.

You need to set just the width of the image and leave the height empty. In that way images can expand in height. Or oposite
