All are good but specialize in different things.

You might want to start by telling us what you will use the store for and your webmaster's abilities. Will you have a developer or PHP programmer do all your customizations? Or will you be paying for the changes? or will you maintain yourself? All these things play a part in any recommendation. If you are a good programmer, any will do whatever because you can customize with no problem. If you will pay for changes or you will do but are not a pro, you want to go for the application that is closest to your needs to save you work.

 

In your list you forgot Drupal Development. Very similar to Joomla, but better in my opinion. Drupal with UberCart module is a pretty good shopping cart system for any beginners website. OsCommerce is far more customizable.

 

Another thing to consider is the support available for each.

For a beginner site to a medium level site oscommerce is pretty good.

It has a good community and lots of contributions too.

easily customizable and does not eat too many resources.

 

My vote for osCommerce.

You're asking in the osCommerce support forum. Which one do you think is going to be the most often recommended? If you want an impartial opinion, you'll need to ask in some generic shopping cart discussion place, such as a hosting service community (e.g., lunarforums.com's Ecommerce board) or something like LinkedIn.
