Remove Product Name+/- all together

Hi,

 

I have found ways to remove the '+' or '-' from the Product Name sorting option at the top of the categories page, but would like to remove it all together.

 

I am also trying to get the categories section to look like the other pages I have styled, but what code needs to be kept to make sure the products are still separated by category:

ie. Item 1,2,3,4,5 are in category 1 then item 6 is in category 2 and wont be shown until i click on category 2
