Should I allow access to admin control panel?

Well, let's say I'm going to install osCommerce for a client and charge some money for the modificication, localization, etc.... Should I then allow the client to add the products himself or should this also be my work, since the client doesn't know anything about e-shops or php or adding the new products to osCommerce.

You could train the client... for a charge, with the understanding that if they do anything to cause issues that requires your time to fix, they will be charged extra for it.

 

Or... sell them a package of "Administration" hours that can be used for anything having to do with osC.

 

You can also charge an extra monthly fee for maintaining the site.

If you haven't already done so...I'd install the admin with levels contribution. It limits the access to certain areas...that way you don't have the shop owner mucking about with things he knows nothing about. :D
