I'm trying to do similar, there are a couple of contributions - "remove prices" and "remove-by-now" I haven't got either to work yet. On another site I have personalised items - I added this into the product info screens by using - Imprint text options Hope this helps

To do it on all the other pages i have to change the scripts in /catalog/includes/modules
