Custimising the element's outputted HTML, not the layout html

Hello,

 

I've got the STS templating system installed, so am fine for adjusting the layout

 

But want to change the outputted HTML for the indervidual elements. Like

making the categories box into a div w / heading and a Unordered List.

 

Any help / docs?
