OsCommerce does not have a template system "out of the box". If you want something like this, you would need to install the Simple Template System (STSv4.5.8) that would add the feature to allow you to install different templates via the admin. Everyone keeps saying to "check the knowledgebase" but there's no straightforward help there either. Pretty good scam actually....sell expensive templates that you can't install....beautiful.
