Question to "What's New" and new products

Hello,

 

I'm a little confused about the "What's New" box and new products:

 

. As I know I can limit the maximum values of new products for the "What's New" box in "Maximum Values/New Products Listing" and if I don't limit the values the whole database is shown, right?

 

. How is the logic behind the values shown: If new products arrive are they then shown first and the others disappear in a limited values display?

 

. What's the logic behind "Maximum Values/New Products Module" (maximum number of new products to display in a category)? If I klick a category all products in this category appear, right? Or can I limit this display of new products and the others are not new, but why should I? And what are the not new ones?
