Trying to figure how to display things with categories

Ok.. so i have been working on this t-shirt printing company's website, and i wanted to do the following:

 

Right now, I have 3 main categories.. Clothing, Signs and Banners, Paper Printing.. Each of those categories have their sub categories - clothing having the MOST sub-categories.

 

The clothing one is the one that is giving me a hard time because under clothing there is Mens, Womans, and Youth.. and then you have basically the same sub-categories within each of those.

 

NOW, i wanted to show a list of categories on the main page but NOT the main parent categories, and NOT all the sub categories.. For instance, i would like to have a category listed on the main page called T-shirts and clicking it will bring you to ALL t-shirts in the store Mens, Womans, Youth.. Now, i know you can copy products and such to have them in two categories.. I am just unsure how to create a second ground of categories and NOT have it attached to the main categories box.

 

I was thinking of using this:

more category boxes and just not call for it on the left column and then use the Categories on Main page contribution with it'

well, i uploaded the MORE CATEGORIES contribution, but that doesnt do ANYTHING because i need to have them as main categories.. I wonder if it would let me turn some on and off.. I dont really know though
