Go to catalog/admin/includes/stylesheet.css and make the changes in there for the admin section. Only problem is, there is no stylesheet.css in the includes folder..? So how do I change colour etc without them?

Try that instead. ;) If I suggest you edit any file(s) make a backup first - I'm not perfect and neither are you.
