I'm trying to change:

Top » Catalog My Account | Cart Contents | Checkout

Can someone please help!?

Also is there any basic tutorials for how to get started when a person has no php/oscommerce experience.

I've spent countless hours already, and have barely gotten off of home base.

What is the best way to learn this, (something BESIDES trial and ERROR!)

Your help will be greatly appreciated, as this is a very urgent project.

Trial and error is part of the learning. What you want to modify is in catalog/includes/header.php.
