In the list of downloads, I chose Windows Essentials (AMD64). When I want to «run», a message appears … something like : This installation package is not compatible with this kind of processor. Contact your retailler. I don’t know much … What should I do ?

Contact your retailler. I don’t know much … What should I do ? You have to install mySQL on your local machine if you want to run it that way, you'll also need to install PHP. But what exactly are you trying to do? osCommerce is a web based software and you will need server space to run it, from there you can download backups of your mySQL database.
