You need to install either the Header Tags SEO or Categories Descriptions contribution. The first is preferable if you don't have a meta tags contribution installed already.

Is there an easier way to change this text, if all I want is for the category name of each to show (rather than "let's see what we have here" or a personalized message)?

On re-reading your post, the Categories Description contribution wouldn't help you, although Header Tags SEO would. The problem is that there's only one file to handle all of the category pages so the only way to do what you want is to have the code handle it dynamically. There is a way to edit the code to include the categoy title by using the category name. That is more simpler than Header Tags, but doesn't provide much benefit. I don't recall it off the top of my head. Someone else will probably post it or you can find ithere.

I went to the link you mentioned in your last post, and made the file changes it suggested (at least, I think I did..) It seemed to work (no errors or anything), except that rather than showing the category name, it shows that category's cPath number. Anyone know where I went wrong? It seems like it should be a pretty simple fix...

I started a new topic devoted to this specific problem, and it is now fixed using part of your solution, Jack, and part of Burt's. I have switched the "define('HEADING_TITLE', 'let/'s see what we have here');" with "define('HEADING_TITLE', ucwords(strtolower($categories['categories_name'])));"
