date of birth

the default setup of osc requires customers to enter date of birth in mm/dd/yyyy format

 

i want to swap this to DD/MM/YYYY

 

i have edited some language files and swapped those round thinkin they are what i needed to change but they are just language files so it has not done what i want

 

can anyone tell me what file i need to edit and what i need to change to get the required result?
