Cart with shipping and pricing. No inventory quantity or payment used

Hi Everyone,

 

I want to know what would be the best way to use this shopping cart for online ordering only without using a payment module or entering in inventory quantity? I only want the purchaser to total up their items, add shipping, tax and get a total. Then have the order forwarded to me.
