defined constant not defined -losing orders!

Some defined constants are displaying, such as 'TABLE_HEADER_TITLE', instead of "Some Title". It's also causing customers to not be able to add anything to their carts! I recently upgraded to php5.2.6, but nothing else has changed. Is there a setting I needed to change in the php.ini file perhaps?

Ok, I see those files and the defines in the languages/english/ dir. Now how do I make sure they're being used? Maybe osC doesn't know which language to use?
