I can tell you this much: phpMyAdmin is a tool that allows you to see into your mySQL database. I've started using phpMyAdmin recently and it's really keen! At first it looked scary, but I found my way around very quickly and now it is a very useful tool. Without knowing what's in your database, you'll never get a handle on what's going on in osCommerce and how it works (for instance, yesterday I learned that all of your product information is stored in the database and not in PHP files).
