Include category tree in checkout order and email

I am desperately trying to include the catagory and subcatagory as well as the product in the order details is this possible? I also need to place some text in the order that says of you are outside the uk mainland the flat rate shipping does not apply we will email you with your shipping fee.

 

please can anyone advise, I have been googling this for a week or so now with no joy?
