How Do I Change the Order of Products in Categories?

All of my products appear in alphabetical order in each of my category pages. I am also only getting 6 products listed per page (which looks awkward because I get a row of 4 on top and then a row of 2 underneath).

 

Is there any option in oscommerce to do the following:

 

1) Change the amount of products listed per category per page.

2) Manually adjust the order of the products that appear in each category.
