Need help with Admin - Order Status

I have 7 different order status. When displaying orders in admin I need:

1. Default view to show all orders EXCEPT completed orders (my status = despatched)
   
2. Be able to change sort order of orders shown to either Status or Date Purchased
   
3. Show 50 orders at a time on the page instead of 20
   

Can anyone give guidance how to make changes?....

Do I need myphp to modify sort order of status?
