Sorry, out of stock text. Where is it?

Where can I find this text so I can change it? and how do I make it appear under product name before they get to the shopping cart?

It's in the administration section under Configuration, Stock. There you'll find "Mark product out of stock" line, click on it and change.

Use NOTEPAD++. It's easy to search for a string within all files in folders and sub-folders.
