I run a website that contains documents which I wish to sell. Is there a module that will allow me to set up shipping using a digital delivery method? In other words, once the customer pays, then they are allowed to download the file in which they've paid for.

If you've installed it the downloads feature can be accessed through the Admin by going to Configuration -> Downloads.
