To edit the condition and privacy files, open up catalogincludeslanguagesenglishconditions.php and privacy.php. Change the text to whatever you want. To make the site live, turn on whatever payment gateways you want, add the products, and go! (Oh, and edit the default.php file in the includes...englishdefault.php to change the heading text).
