Payment on Dispatch

I have been setting up and installing OSCommerce for someone, integrating it with SECPay.

 

Currently, a customer enters their card details on checkout, payment is taken and she then processes and dispatches the order. All works.

 

She would, however, like to be able to take the card details on checkout, then process the order. Once all the items are verified as being in stock and the order is made up, she would then like to be able to take the customers payment and finally dispatch the goods.

 

 

Does anyone know if this is easily possible?
