DB fields :: products attributes?

I installed EasyPopulate so I can work with Excel files. I saved the basic oscommerce install sample files as a csv and opened the csv in Excel. The csv file created from the default installation has fields from A through DE!! Tons of fields, and seems like a lot of duplication. I can't track how this relates to the few settings I see in Prod. Attr. settings.

 

How, exactly, do the Products Attributes settings (let's just use the default settings) relate to the actual database fields? We're not using any multiple options (such as for color, size, etc.) I realize this is a dumb question, so SIA (sorry in advance) I can't modify our product files until I can map the correlation between settings and actual fields. Duh. Perhaps someone could at least tell me how or where to search for this?
