changing charater set

Hi There

 

a point in the right direction please.

 

I am transfering from american servers to uk servers an oscommerce website - all has gone well.

 

however there is showing an  prior to the £ so guessing that the charset needs changing - is there a global file for this header setting?.. if so where?
