Editing Nested Code

In template.html content is dynamically inserted in (variable?) placeholders, eg. <td>$categorybox2</td>.

My question is: Can anyone tell me how I determine exactly which PHP files go into constructing that content?

I'm styling my first osCommerce site and want to strip out some of the more damaging nested table code such as cellpadding and height settings, but it's a nightmare trying to figure out which files are having the effect on the generated HTML output.
