Thanks When an order is completed the e-mail is sent through the catalog/checkout_process.php file. However, all of the text for the labels of the e-mail are put in catalog/includes/languages/english/checkout_process.php. IF you are looking for a different way to format the e-mail, you might want to look at catalog/checkout_processing.php around line 223 where the e-mail starts getting formated and adjust is as you would like to.
